Description

These easy homemade biscuits are made with cold grated butter for a tender, buttery result. They require only six basic ingredients and bake in 11–15 minutes.

Ingredients

Units Scale
  • 2 cups all-purpose flour
  • 2 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/3 cup cold butter, grated
  • 3/4 cup milk
  • 1 tablespoon softened or melted butter, for brushing

Instructions

  1. Preheat the oven to 475°F. Lightly grease a baking sheet.
  2. Whisk together the flour, baking powder and salt in a large bowl.
  3. Grate the cold butter directly into the flour mixture. Toss gently until the grated butter is evenly distributed.
  4. Make a well in the center of the flour mixture and pour in the milk.
  5. Stir just until the flour is moistened and the dough begins pulling away from the sides of the bowl. Do not overmix.
  6. Turn the dough onto a lightly floured surface. Knead gently for approximately 30 seconds, just until the dough comes together.
  7. Pat or roll the dough to approximately 3/4-inch thickness.
  8. Cut out the biscuits with a floured 2 1/2-inch biscuit cutter. Press the cutter straight down without twisting it.
  9. Arrange the biscuits close together on the prepared baking sheet. Brush the tops with softened or melted butter.
  10. Bake for 11–15 minutes, until risen and golden brown. Serve warm.

Notes

Butter: Keep the butter cold until you are ready to grate it. If it softens after grating, refrigerate it briefly before adding it to the flour.

Mixing: Stir and knead only until the dough comes together. Overworking biscuit dough can make the finished biscuits tough.

Cutting: Press the biscuit cutter straight down instead of twisting it. Dip the cutter in flour between cuts if the dough begins to stick.

Serving: These are especially good with my creamy chicken pot pie soup.

Storage: Store completely cooled biscuits in an airtight container. They are best on the day they are baked.

Recipe Credit: Adapted from the Old-Fashioned Biscuits recipe printed on the Baker’s Corner Baking Powder container. I replaced the shortening with grated cold butter.
