Happy Super Bowl Sunday! This week is all about making the most of those leftover snacks – and what better way to kick things off than with a baked potato bar? Load ’em up with all your favorite toppings for a touchdown-worthy meal!

But wait, there’s more! With Valentine’s Day just around the corner, I’ve got a budget-friendly treat planned for Wednesday that’ll make your heart swoon without breaking the bank. Because who says love can’t be delicious and affordable?

Wishing you all an amazing week filled with fantastic eats and plenty of reasons to celebrate! Enjoy every bite and every moment!

I will continue to provide free weekly meal plans through 2024! Each plan follows the design of my “Stick to Your Budget Checklist” and includes 3 pantry friendly meal options (at least one of which is vegetarian), 3 budget conscious recipes, and assumes 1 leftovers day. There are also 2 breakfast options and a sweet treat to try!

Monday: Grab a bag of russet potatoes, and scrounge up some toppings for a super easy and fun baked potato bar! This is a great way to use leftover dips and toppings from the super bowl too!

    Tuesday: Try this Ground Beef Stroganoff that is full of flavor and low on ingredients! You’ll be shocked at what you can put together with only a few pantry friendly staples.

    Wednesday: I originally made this French Onion Chicken as part of a $20 date night on Youtube. This is the perfect Valentine’s meal that isn’t going to bust your budget!

    Thursday: This Sweet Potato Black Bean Chili recipe is another pantry friendly treat that is so hearty and surprisingly vegetarian! It’s a great treat to enjoy after your Valentines dinner.

    Friday: This BBQ Chicken skillet is super fast to put together and so delicious. I bet this won’t be the last time you whip this up for your family!

    Saturday or Sunday (one night is leftovers): This easy pinto bean soup is my absolute favorite way to use a pound of dried pinto beans! It’s so flavorful and you are sure to have plenty of leftovers!

    For Breakfast: This Farmers Casserole is the prefect make ahead casserole to bake, slice up and re-heat all week!

    If you haven’t already tried this Blueberry Banana Muffins, you’re missing out! These are the perfect breakfast to make ahead and grab and go all week. They are even good as a snack!

    For a Sweet Treat: These two ingredient cupcakes are the perfect budget friendly dessert for Valentine’s Day. I’d do sprite and strawberry cake mix with vanilla frosting and some pink sprinkles!
