I plan to savor these few days between Memorial Day and June 1st before summer officially kicks in. It feels like a bonus this year, and I’m all for it! This week, I’m leaning into the sandwich vibe because I feel like it’s perfect sandwich weather. Plus, I’ve got a pantry-friendly chicken tortilla soup that I know you’re going to love.
I hope you have a nice Memorial Day, a time to honor and remember those who fought for our freedoms in the US. It’s a solemn reminder of their sacrifice and service, and I’m grateful for their courage. I’ve also added more BBQ recipes to the lineup, perfect for enjoying the outdoors and the warm weather. I’ve tailored this plan to accommodate the needs of a family of five, drawing from personal experience. Meal planning is a cornerstone of our routine for three key reasons.

What’s Included in Each Family Friendly Meal Plan:
Each weekly meal plan includes dinners for 6 out of 7 days (one day is for leftovers) and 2 breakfast options and a sweet treat to try. I don’t include a lot of breakfast and lunch options because we rely heavily one “One Month in One Day Meal Prep For Busy Parents” method and I prep all of those once a month! Tuesday: This Chicken Tortilla Soup was born out of a pantry challenge and I’m so grateful for this. Chances are, you might already have everything you need to make it!
Wednesday: Poor Mama’s Cheeseburgers are a simple treat to throw in the oven. Your family will be thanking you for such a delicious treat!
Thursday: These Air Fryer Tuna Melts are crispy and pantry friendly. Bonus: They are super easy to throw together on a weeknight!
Friday: Chicken Diane feels and tastes fancy but it’s actually really easy and has incredible flavor! It’s perfect for a more “special” Friday night dinner.
Saturday or Sunday (one night is leftovers): Cool down with this easy Waldorf Chicken Salad and chips on the side as an easy weekend dinner!
For Breakfast:
Start the week strong by baking up a hash brown casserole and re-heating slices all week or just make this on the weekend and devour it!
It’s time to whip up some of my kids favorite Sheet Pan Pancakes. So much easier than flipping each one, you’ll never go back!
