This one is a variation on a classic budget dish in my house. For years we’ve made fried eggs and rice on busy nights but adding the scallions and soy sauce really puts it over the top!
This recipe is a super fast weeknight favorite that feels fancy but takes little to no time or money. There is something about egg yolk and rice that is a match made in heaven. And if you’re not a yolk fan, this is still good with scrambled or over hard eggs.
Eggs and Rice: A Classic Budget Dinner
For years, my husband and I have made what’s called a lacy egg, which is basically a really fast fried egg in oil over high heat so that it crisps right up and the whites end up with a lacy pattern. This egg over white rice is delicious especially with some steamed broccoli, soy sauce, and chili crunch. This new recipe puts things over the top by cooking fresh scallions in with the egg and cooking the egg right in the soy sauce.

Eggs Over Easy With Scallions, Soy Sauce, and Rice
Ingredients
- 1 tbsp oil (high heat recommended)
- 2 eggs
- 1 cup cooked rice
- 2 tbsp soy sauce + more for serving
- 1 scallion sliced
Instructions
- Heat oil over high heat in a pan or wok.
- Once the oil is hot and glistening, add the eggs, sprinkle with the scallions, and pour on the soy sauce.
- Cover the pan and cook for about 3 minutes until the egg white is cooked but the yolk is still runny (depending on how you like it).
- Serve the egg over the cooked rice and top with more soy sauce to your liking.
