Description

This deviled egg pasta salad is creamy, tangy, and packed with flavor—like your favorite deviled eggs mixed into a classic pasta salad. Perfect for BBQs, lunches, or potlucks!

 


Ingredients

Scale
  • ½ pound pasta (macaroni, shells, or cavatappi)

  • 4 hard boiled eggs, chopped

  • 2 scallions or 2 tbsp red or yellow onion, diced

  • ½ cup mayonnaise (adjust to taste)

  • 1 tbsp yellow mustard or Dijon mustard

  • 3 tbsp pickle de gallo or relish

  • 1 tbsp apple cider vinegar

  • Salt and pepper, to taste

  • Paprika and extra scallions for garnish


Instructions

  1. Cook pasta according to package instructions. Drain and rinse with cold water.

  2. In a large bowl, combine cooled pasta, chopped eggs, and onions or scallions.

  3. In a separate bowl, mix mayo, mustard, relish, and vinegar.

  4. Pour dressing over pasta mixture and toss to coat.

  5. Season with salt and pepper. Garnish with paprika and extra scallions.

  6. Chill until ready to serve.
