Scale
- 4 large burrito-sized flour tortillas
- 2 boneless, skinless chicken breasts
- 1 tablespoon cooking oil
- 1 large onion, thinly sliced
- 2 bell peppers, thinly sliced (use a mix of colors)
- 1 teaspoon salt
- 1 teaspoon paprika (or smoked paprika)
- 1 teaspoon chili powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon garlic powder
- 1/2 teaspoon cumin
- 1 teaspoon sugar
- Sour cream, for spreading
- 1 cup shredded cheddar cheese
- 1 teaspoon cornstarch
- Olive oil, for cooking
Instructions
1. Prepare the Homemade Fajita Seasoning:
- In a small bowl, mix together the salt, paprika, chili powder, onion powder, garlic powder, cumin, and sugar. Set aside.
2. Cook the Chicken:
- Slice the chicken breasts into thin strips.
- Heat a large skillet over medium-high heat and add the cooking oil.
- Add the chicken strips to the skillet and sprinkle with about half of the homemade fajita seasoning mix.
- Cook the chicken until it’s no longer pink in the center, stirring occasionally. This should take about 5-7 minutes.
- Remove the cooked chicken from the skillet and set it aside.
3. Sauté the Vegetables:
- In the same skillet, add a bit more oil if needed and add the thinly sliced onions and bell peppers.
- Sprinkle the remaining homemade fajita seasoning mix over the vegetables.
- Sauté the vegetables until they are tender and slightly caramelized, about 5-7 minutes.
- Sprinkle cornstarch over the vegetables and stir well. This will help thicken the sauce.
4. Assemble the Chicken Fajita Wraps:
- Warm the large burrito-sized tortillas.
- On each tortilla, spread a generous amount of sour cream.
- Sprinkle shredded cheddar cheese over the sour cream.
- Add a portion of the cooked chicken and sautéed vegetables on top.
- Fold in the sides of the tortilla and then roll it up, making a burrito.
5. Crisp Up the Wraps:
- Heat a clean skillet over medium-low heat with a teaspoon of olive oil.
- Place the wrapped burritos seam-side down in the skillet.
- Cook them for a few minutes on each side until they become crispy and golden brown.
6. Serve and Enjoy:
- Slice the Chicken Fajita Wraps in half diagonally, and serve them while they’re warm.
- Optionally, serve with your favorite dipping sauces or salsa.
