As I say, all hail the rotisserie chicken. This dish is amazingly delicious, budget friendly, and easy to make any night of the week. Your family will seriously be impressed!
I just love a recipe that is simple and beautiful. These chicken enchiladas with green sauce are just that. I shared them on my Youtube channel recently. You actually only need a few simple ingredients and you have this incredible dish. It requires 3 cups of chicken which ends up being less than half of a rotisserie chicken. In my area rotisserie chicken is less than $5 so this is extremely budget firendly!
What You Need to Make Chicken Enchiladas with Green Sauce
This dish is made with just 3 cups of shredded rotisserie chicken ($2.50), or you could use any leftover chicken you have. I also think that, in a pinch, canned chicken would be good! Follow that up with 8 corn tortillas ($.50), 1 jar salsa verde ($2) , and 2 cups of cheese ($2) and you’re good to go!
To assemble the enchiladas, pour 1/4 cup of enchilada sauce over the bottom of a 9×13 pan. Then place 2 tablespoons of chicken and a tablespoon each of salsa verde and cheese inside each tortilla. Roll them up and place them seam side down in the pan. Cover the rolled tortillas with the remaining salsa and what’s left of the cheese and bake at 350 degrees for 20 minutes until it’s bubbly and melty.
It’s All About The Toppings!
I like to top ours with chunks of delicious avocado and my kid friendly pico de gallo. I call it “kid friendly” because it doesn’t have any jalapeños. These are very inexpensive toppings and add a lot of flavor. Other options are sour cream, greek yogurt, hot sauce, more salsa, or cilantro.

Chicken Enchiladas with Green Sauce
Ingredients
- 3 cups shredded chicken rotisserie, if you have it
- 2 cups shredded cheeese
- 8 corn tortillas
- 1 jar salsa verde
- 1 avocado diced (optional as a topping)
- 1 cup kid friendly pico de gallo
Instructions
- Preheat oven to 350 degrees.
- Pour 1/4 cup of salsa in the bottom of a 13×9.
- Fill each tortilla with 2 tablespoons of chicken and 1 tablespoon each of salsa verde and cheese. Roll and place seam side down in the casserole dish.
- Top with the remaining salsa and cheese.
- Bake at 350 for 20 minutes until bubbly.
- Top with kid friendly pico and diced avocado (optional).
