This 4-ingredient Slow Cooker Chicken Curry is one of the easiest dinners you can make. Chicken, salsa and curry powder cook until tender, then cream cheese is stirred in for a rich, creamy sauce. Serve it over rice for an easy, budget-friendly Crock Pot dinner with tons of flavor and almost no prep.

- 1/2 an onion, chopped (optional)
- 2 large chicken breasts sliced in half or 4 boneless skinless chicken thighs
- 1 cup of salsa
- 3 tablespoons curry powder
- 4 ounces cubed cream cheese
- 3 cups cooked white rice (for serving)
Instructions
- Place sliced chicken breasts in the bottom of a slow cooker.
- Top the chicken breasts with 1 cup of salsa and 3 tablespoons of curry powder.
- Cook on low for 3 hours until the chicken is fully cooked through.
- Add cream cheese to the slow cooker, mix, and shred the chicken at the same time. You can also shred the chicken in a separate bowl with a hand mixer.
- Serve over warm rice and enjoy!
