Description

This 4-ingredient Slow Cooker Chicken Curry is one of the easiest dinners you can make. Chicken, salsa and curry powder cook until tender, then cream cheese is stirred in for a rich, creamy sauce. Serve it over rice for an easy, budget-friendly Crock Pot dinner with tons of flavor and almost no prep.


Ingredients

  • 1/2 an onion, chopped (optional)
  • 2 large chicken breasts sliced in half or 4 boneless skinless chicken thighs
  • 1 cup of salsa
  • 3 tablespoons curry powder
  • 4 ounces cubed cream cheese
  • 3 cups cooked white rice (for serving)

Instructions

  1. Place sliced chicken breasts in the bottom of a slow cooker.
  2. Top the chicken breasts with 1 cup of salsa and 3 tablespoons of curry powder.
  3. Cook on low for 3 hours until the chicken is fully cooked through.
  4. Add cream cheese to the slow cooker, mix, and shred the chicken at the same time. You can also shred the chicken in a separate bowl with a hand mixer.
  5. Serve over warm rice and enjoy!
