Easy Chicken Tetrazzini Casserole

If you’ve ever had a classic chicken tetrazzini, you know how cozy and comforting it can be. My mother-in-law has made it for years, and it’s one of those recipes that just brings everyone to the table. I decided to make my own version — simple, affordable, and just a little extra cheesy (because let’s be honest, cheese makes everything better).

This recipe uses ingredients you probably already have on hand — like spaghetti, frozen spinach, and leftover chicken — and comes together in under an hour. It’s the perfect easy weeknight dinner or Sunday comfort meal.

Ingredients

  • 6 oz cooked spaghetti (I used Jovial)
  • ¾ cup chopped frozen spinach (thawed)
  • 2 cups chopped cooked chicken
  • 1 can cream of chicken soup (I love @PacificFoods)
  • 1½ cups sour cream or Greek yogurt
  • 1 teaspoon salt
  • ½ teaspoon pepper
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese

Instructions

  1. Preheat oven to 350°F.

2. In a large bowl, combine cooked spaghetti, chopped spinach, chicken, cream of chicken soup, sour cream, salt, and pepper. Mix until well combined.

3. Pour mixture into a greased 9×13-inch baking dish. Cover with foil and bake for 20 minutes.

4. Remove foil and top with cheddar and mozzarella cheese.

5. Bake for another 10 minutes, then broil for 2–4 minutes until bubbly and golden.

6. Slice and serve warm.

Tips & Variations

  • Swap spinach for broccoli or peas if that’s what you have.
  • Use leftover turkey instead of chicken (great for after Thanksgiving!).
  • Add crushed Ritz crackers or breadcrumbs on top for a crispy finish.
  • Make it gluten-free with GF spaghetti and soup.

How To Store:

Refrigerate leftovers in an airtight container for up to 3 days. Reheat in the oven or microwave.

This easy chicken tetrazzini casserole is made with cooked chicken, spaghetti, spinach, cream of chicken soup, sour cream, cheddar, and mozzarella. It’s creamy, cheesy, family-friendly, and a great way to use leftover chicken for an easy weeknight dinner.
