Easy Baked BBQ Chicken Drumsticks for Realistic Weeknight Dinners

Life with three kids underfoot means I need dinners that are both delicious and doable. I love cooking, but sometimes I need a main that’s simple so I can focus on a few slightly fancier sides without going crazy. Enter these baked BBQ chicken drumsticks. Crispy, golden, and packed with flavor, they’re my go-to weeknight solution that kids and adults alike will devour.

Why I Love This Recipe:

  • Minimal prep: just season, baste, and bake.
  • Budget-friendly: organic drumsticks are great, but even sale ones at around $0.99/lb work perfectly.
  • Flexible sides: because the chicken is mostly hands-off, I can make cheesy mashed potatoes and maple roasted carrots for a full, cozy meal.
  • Family-friendly: the kids love helping baste the chicken, and everyone fights over the crispy skin.

Ingredients:

  • 2 packages chicken drumsticks (about 10, 2–3 lbs)
  • Salt & pepper to taste
  • ½–¾ cup BBQ sauce (I love Korean BBQ from Primal Kitchen)

Optional Sides:

  • Cheesy mashed potatoes
  • Maple roasted carrots

Instructions:

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Pat chicken drumsticks dry and season generously with salt and pepper.
  3. Place drumsticks on the baking sheet and baste with 2–3 tablespoons of BBQ sauce.
  4. Bake for 20 minutes.
  5. Remove from oven, flip drumsticks, and brush with more BBQ sauce using a silicone brush.
  6. Bake for an additional 10 minutes, or until chicken is golden, crispy, and reaches 165°F internal temperature.
  7. Serve with your favorite sides, like cheesy mashed potatoes and maple roasted carrots.

Tips for Success:

  • Pat dry: Removing excess moisture ensures crispier skin.
  • Baste generously: Reapplying BBQ sauce after flipping helps caramelize the drumsticks.
  • Use a silicone brush: It prevents sauce from clumping and makes basting easy.
  • Check temperature: Always confirm the thickest part reaches 165°F for safety.

Conclusion:
These baked BBQ chicken drumsticks are my go-to weeknight dinner when I want something flavorful, kid-approved, and realistic. With minimal prep, I can focus on sides or just enjoy a meal without feeling overwhelmed. Whether you’re feeding a busy family or meal prepping for the week, these drumsticks deliver.
