As the season calls for it, we’re diving into lighter, fresher fare, kicking off with a crisp salad and wrapping up the week with a beloved family classic: Mom’s famous marinated London broil served with her irresistible dill potatoes. Plus, there’s an exciting addition to our breakfast lineup – a brand new zucchini recipe (also my mom’s! – clearly she’s a good cook!) you won’t want to snooze on! Let’s make this week deliciously memorable!
Monday: I’m sticking with this little Monday tradition of a salad. Cobb salad is a family favorite especially when I lay it out in rows so everyone can take a little bit of what they like and avoid anything they don’t.
Tuesday: I initially tried this recipe as meal prep but it’s so good it deserves a spot on your dinner rotation too! My husband keeps asking if we have any more of that Peanut Chicken? So, you might want to make the double batch recipe just to have some leftovers!
Wednesday: This is the salad Jennifer Aniston supposedly ate everyday on the set of Friends. It’s pretty good, so I kind of believe it! Serve this up with some grilled chicken and call it a meal!
Thursday: This steak fajita recipe has a marinade made with the classic kitchen helper, Lipton Onion Soup mix! I just love it! This is also perfect with chicken or shrimp, so utilized the protein you have on hand to save on these!
Friday: These Crispy Black Bean Tacos are such a treat and require only a few pantry friendly ingredients! This is a great roll over for your leftover fajita tortillas! You can find the recipe in my FREE e-book “10 Crazy Cheap Meals” and you’ll find some other delicious recipes too!
Saturday or Sunday (one night is leftovers): This London broil recipe paired with dill potatoes is a family favorite I’ve been eating my entire life! We always grab London broil because it’s a really inexpensive cut of meat that tastes delicious marinated.
