Cooking for me is like a dance with the elements and my mood. Last week’s unexpected snowstorm in NH threw a curveball into my grilling plans, just when I was starting to enjoy them! However, this weeks April Meal Plan brings a welcome change with temperatures soaring back into the 60s and a rare eclipse on the horizon! Here in my neck of the woods, we’re anticipating a breathtaking 95% coverage. I hope you have the chance to witness something equally awe-inspiring!
As for this week’s meal plan, I’m shaking off the remnants of that snow funk and embracing the return of grilling and all things spring. Get ready for some barbecue delights and fresh seasonal favorites. Oh, and did I mention? There’s a brand-new ice cream cake recipe waiting to be shared! I can’t wait for you to try it out and hopefully fall in love with it just as much as I have. Let’s dive into a week of delicious eats and maybe even catch a glimpse of something magical in the sky. Here’s to good food, good weather, and good times ahead!
Monday: Meatless Monday is back and I couldn’t be more pleased! Grab some inexpensive ramen noodles and whatever veggies you have laying around to make this Veggie Ramen Noodle Stir Fry.
Tuesday: For taco Tuesday, try these Fish Tacos made with inexpensive fish sticks. They are super easy to put together and you’d never know they were made with a budget friendly staple!
Wednesday: Grab a rotisserie chicken and toss it into this Caesar Pasta Salad. This is the perfect spring time treat!
Thursday: New to the blog is this Tuna Melt Wrap. You can crisp it up in the air fryer or a pan, either way it’s very pantry friendly!
Friday: A mouthwatering treat, these Marinated and Grilled Chicken Tenders and Sweet Potatoes are the perfect way to get back at the grill. They are full of flavor and easy to execute!
Saturday or Sunday (one night is leftovers): To keep the grill warm, grab some steak tips and marinade them in this Bourbon marinade. It’s sure to become a favorite way to dress up your tips. And cook up some of My Mother In Law’s Spinach Rice on the side for a complete meal!
For Breakfast:
Indulge in Overnight Blueberry french Toast Casserole this weekend or eat through the week! It’s a great make ahead treat!
A healthy and fun breakfast is these breakfast banana splits! Just grab your favorite yogurt and pour it over a banana with fruit, chocolate chips, and whatever you like!
For a Sweet Treat: This Fried Ice Cream Cake is going to be your new favorite! It’s simple to make and oh so delicious to eat!
