1 tsp lemon zest

Juice of 1 lemon

1 tbsp avocado mayo

1 tbsp olive oil

2 cloves garlic, grated

1 1/2 tsp dried oregano

1 tsp salt

1 tsp paprika

1 1/2 lb organic air-chilled boneless skinless chicken thighs, cut into small squares

5 tbsp softened grass-fed butter (or olive oil alternative)

1 tbsp fresh parsley, chopped (or 1 tsp dried)

Juice of 1 lemon

1/4 tsp paprika

1/4 tsp black pepper
-
1/4 cup freshly grated parmesan cheese
Instructions

In a large mixing bowl, whisk together lemon zest, lemon juice, avocado mayo, olive oil, garlic, oregano, salt, and paprika.

Add chicken and toss to coat. Let sit at room temperature for 15–20 minutes (or refrigerate to marinate longer).

In a small bowl, mix butter, parsley, lemon juice, paprika, and pepper. Set aside.

Thread chicken onto soaked wooden or metal skewers.

Air Fryer Method: Preheat to 400°F. Spray basket with oil and place skewers in. Cook for 13 minutes, flipping halfway. Brush with garlic butter, cook 1 more minute, then remove.

Oven Method: Preheat to 425°F. Line a baking sheet and lightly grease. Bake skewers for 20–22 minutes, flipping halfway. Brush with garlic butter, then broil for 1–2 minutes.
