If there’s one chicken skewers recipe that never fails in my house, it’s this one. My 7-year-old begs for these garlic butter air fryer chicken skewers every single week. I’ve honestly made them twice a week for a month, and no one complains!

They’re juicy, full of flavor, and incredibly easy to make using boneless skinless chicken thighs—or you can even use chicken breast if that’s what you have on hand. This is one of those simple, wholesome meals that checks all the boxes: minimal ingredients, quick cooking time, and total crowd-pleaser.

Choosing the Cleanest Ingredients (And Why It Matters)

One of the reasons I feel so good making this recipe over and over again is because I use clean, simple ingredients that I trust—especially when it comes to the chicken and butter.

I always reach for air-chilled organic chicken thighs when I can. These chickens aren’t fed GMO feed loaded with pesticides, and they’re air chilled—not dunked in chlorine water like conventional chicken. That means no weird aftertaste or added water weight—just real, high-quality chicken that tastes the way it should. It’s a little more expensive, but absolutely worth it.

I also use grass-fed butter, which comes from cows raised on a natural grass-based diet. It’s richer, cleaner, and free from the additives and chemicals that sneak into conventional dairy. And let’s be honest—it just tastes better.

Ingredients

For the Chicken & Marinade:

  • 1 tsp Lemon zest
  • Juice of 1 lemon
  • 1 tbsp Avocado mayo
  • 1 tbsp Olive oil
  • 2 cloves Garlic, grated (or ½ tsp garlic powder)
  • 1 ½ tsp Dried oregano
  • 1 tsp Salt
  • 1 tsp Paprika
  • 1 ½ lbs Organic air-chilled boneless skinless chicken thighs, cut into small squares
    – or substitute chicken breast, cubed

For the Garlic Butter Sauce:

  • 5 tbsp Softened butter (or olive oil)
  • 1 tbsp Fresh parsley, chopped (or 1 tsp dried)
  • Juice of 1 lemon
  • ¼ tsp Paprika
  • ¼ tsp Black pepper
  • ¼ cup Freshly grated parmesan cheese

How to Make Chicken Skewers in the Air Fryer

1. Marinate the Chicken

In a large mixing bowl, whisk together lemon zest, lemon juice, avocado mayo, olive oil, garlic (or garlic powder), oregano, salt, and paprika. Add the cubed chicken and toss well. Let it marinate for 15–20 minutes at room temp, or refrigerate if prepping ahead.

2. Make the Garlic Butter Sauce

In a small bowl, mix softened butter, parsley, lemon juice, paprika, and pepper. Set aside while the chicken is marinating.

3. Thread Chicken onto Skewers

If using wooden skewers, soak them first. Or skip the soak and go with reusable metal skewers—super handy if you make these regularly! Thread chicken pieces on evenly.

4. Air Fryer Cook

Spray your air fryer basket lightly with oil. Place the skewers inside in a single layer and air fryer cook at 400°F for 13 minutes, flipping halfway through the cooking time.

5. Baste & Finish

Brush with garlic butter and air fry for 1 more minute. Then remove and top with more of that delicious buttery sauce and grated Parmesan.


Oven Instructions

No air fryer? No problem—this recipe works great in the oven too.

  1. Preheat to 425°F. Line a baking sheet with parchment or foil and grease lightly.
  2. Follow steps 1–3 above to marinate and skewer.
  3. Bake for 20–22 minutes, flipping halfway.
  4. Baste with garlic butter and broil for 1–2 minutes until the edges get golden.

I use the Instant Omni and have had it for over 5 years. It’s never failed me! It’s technically a toaster oven style air fryer, which means it has plenty of space for longer skewers, and you’re not cramming everything into a tiny basket.

Honestly, it’s one of those appliances that’s worth every penny. I’ve used it to cook full dinners, reheat leftovers, toast, bake, and even cook sides when my main oven is full. It’s a total lifesaver when feeding a whole family or doing meal prep. The size makes a big difference—it’s just easier to cook larger batches, and it’s way more versatile than the smaller, basket-style air fryers.

If you’re planning to cook with metal skewers or just want enough room to spread things out so they cook evenly, I can’t recommend the Omni style enough!

Storing & Reheating

These skewers are just as good the next day. Store in an airtight container for up to 4 days. Reheat in the air fryer or oven. Perfect for quick lunches or batch food prep.
