Air Fried Artichoke Salad
Ingredients
For the Fried Artichokes:
- 2 cans artichoke hearts quartered and drained
- 1 teaspoon garlic powder
- 1 tablespoon oil
- 1/4 teaspoon black pepper
For the Dressing:
- 1 shallot minced
- 1 lemon juiced
- 1/2 teaspoon dried parlsey
- 1 tablespoon dijon mustard
- 1/4 cup sesame oil
Salad Ingredients:
- 2 cups mixed greens
- 1/2 cup sliced celery
- 1/4 cup shredded parmesan cheese
Instructions
- Mix the artichoke hearts, garlic powder, oil, and pepper in a medium bowl and air fry for 15 minutes and flipping half way through.
- While the artichoke hearts are cooking mix the dressing ingredients together in a small bowl or cup measure.
- To assemble the salad place the greens down on a shallow bowl and top with celery and cooled artichoke hearts. Drizzle with the dressing and sprinkle on the parmesan cheese.
