Extra Special Veggie Roll Ups for Lunch or a Snack!

Kids and adults alike love these roll ups. You can keep them vegetarian or add your favorite deli meat!

These veggie roll ups are fabulous any time of year but I really like to make them in the summer time. They are a cool snack or lunch that can be made vegetarian or with your favorite deli meat. I like to make these at the beginning of the week. Ideally they’d be a great snack all week long but most of the time they are gone by Wednesday!

How to Make Veggie Roll Ups

These are basically fool proof. You can use plain tortillas or buy the fun spinach and sun dried tomato ones (I really like to use those during the holidays because they are super festive!). These are also great to make if you are trying to watch your carbs, you can use the low carb wraps.

Like most recipes, starting with prep will set you for success. Dice red peppers or any color of peppers you like. I also like to chop up some scallions. Cucumbers, broccoli, ham, and turkey are also great optional fillings. You will need to chop the veggies but not the meat. I find these are a great way to use up veggies or deli meat.

To make the cream cheese filling soften 8oz of cream cheese. I usually just use the soften setting on the microwave. Mix the cream cheese with 2 tbsp of ranch dressing and 1/2 a cup of shredded cheddar. Spread the mixture evenly across 4-6 tortillas depending on the size. Sprinkle the cream cheese mixture with the chopped veggies and add the meat slices, if you’re using them.

How To Roll the Wrap

Roll the wraps very tightly and wrap them tightly in cling wrap. Place them in the fridge for 4-24 hours. The longer you leave them in the fridge the more the flavors marinate. After the time is up, slice the wraps into 1/2 inch circles and enjoy! These last about 5 days in the fridge and are a great thing to grab for lunch or a snack!

Description

These veggie roll ups are the perfect anytime snack or lunch. Make them ahead and eat them all week! Kids and adults love them!


Ingredients

  • 6 tortillas (homemade sourdough recommended)
  • 1 red pepper (finely chopped)
  • 2 scallions (sliced)
  • 3 oz organic nitrate free deli ham or turkey ((optional))
  • 1 small cucumber or head of broccoli (finely chopped (optional))
  • 8 oz cream cheese (softened (Talimock or Good Culture Recommended))
  • 2 tbsp ranch dressing (Primal Kitchen recommended )
  • 1/2 cup shredded cheddar (grass fed)

Instructions

  1. Mix cream cheese, ranch dressing, and cheddar cheese.
  2. Spread mixture evenly over the tortialls.
  3. Top the mixture with the vegetables and meat if you’re using it.
  4. Roll the tortillas tightly and wrap tightly in plastic wrap.
  5. Refrigerate 4-24 hours. Slice into 1/2 inch slices and enjoy!

Notes

Add any vegetables or meats to this that you enjoy and think might taste good!
