How to Make Chocolate Pistachio Deviled Strawberries
Step 1: Prep the Strawberries
Remove the stems and slice the strawberries in half lengthwise. Using a melon baller or teaspoon, carefully carve out a small hole in the center of each half. It should resemble a hard-boiled egg with the yolk removed.
Set the strawberries aside.
Step 2: Melt the Chocolate
Add ½ cup chocolate chips to a microwave-safe bowl. I like using Hu or Enjoy Life brands.
Microwave for 30 seconds, then stir. Continue microwaving in 15–30 second intervals, stirring each time, until the chocolate is almost melted. Stir until smooth and creamy.
Step 3: Prepare the Pistachios
Finely chop about ⅓ cup salted pistachios. You want them very fine — almost dusty — but with a few small chunks left for texture.
Step 4: Dip & Coat
Dip each strawberry half into the melted chocolate, then immediately into the chopped pistachios. Place them on a parchment-lined plate or tray and transfer to the refrigerator to set.
Step 5: Make the Cream Cheese Filling
While the strawberries chill, add the following to a mixing bowl:
- 1 (8 oz) package cream cheese, room temperature (Tillamook is my favorite)
- ½ cup powdered sugar
- ½ teaspoon vanilla extract
- ⅙ cup full-fat Greek yogurt
Using a mixer, beat on high until light, smooth, and whipped.
Transfer the filling to a piping bag or cookie press fitted with a decorative tip.
Step 6: Fill the Strawberries
Remove the strawberries from the refrigerator. Pipe the cream cheese filling into the hollowed centers, making it slightly mounded and pretty.
Sprinkle with the remaining pistachio “dust” for the final touch.

Ingredients

10-12 fresh strawberries, stems removed and sliced in half lengthwise

1/2 cup chocolate chips (Hu or Enjoy Life recommended)

1/3 cup salted pistachios, very finely chopped

8 ounces full-fat brick cream cheese, softened to room temperature

1/2 cup powdered sugar

1/2 teaspoon vanilla extract

1/6 cup full-fat Greek yogurt
Instructions

While the strawberries chill, make the filling. In a medium bowl, beat the cream cheese, powdered sugar, vanilla extract, and Greek yogurt on high speed until smooth, light, and whipped.

Transfer the filling to a piping bag or cookie press fitted with a decorative tip.

Remove the strawberries from the refrigerator and pipe the cream cheese filling into the hollowed centers.
