slow cooker corned beef and cabbage with carrots sliced in a white 9x13 pan with a large silver spoon

If you’re looking for an easy corned beef and cabbage in the crock pot, this is the recipe you want saved for St. Patrick’s Day and beyond. It’s a true hands-off slow cooker meal that delivers tender corned beef, perfectly cooked vegetables, and rich flavor without hovering over the stove all day.

This slow cooker corned beef and cabbage recipe is festive enough for St. Patrick’s Day, but simple enough for any busy week when you want a hearty, comforting dinner with minimal effort.

Why This Crock Pot Corned Beef and Cabbage Works

After making corned beef every possible way over the years, this slow cooker method is the most reliable. Cooking it low and slow keeps the meat tender, prevents drying, and allows the vegetables to soak up all that savory broth.

Why readers love this recipe:

  • Completely hands-off after a few minutes of prep
  • Perfect for St. Patrick’s Day without the stress
  • Feeds a crowd with minimal effort
  • Works with grocery store or higher-quality corned beef

Choosing the Best Corned Beef

I personally recommend Whole Foods corned beef when possible because the quality tends to be a little higher and more consistent. That said, you can absolutely save money by buying corned beef at Aldi, especially if you’re feeding a larger family. Both options work well in this crock pot recipe.

No matter where you buy it, look for a flat cut around 3½ pounds with the included seasoning packet.

Ingredients (Serves 6)

  • 3½ lb corned beef (with seasoning packet)
  • 1 yellow onion, cut into wedges
  • 2 lb red potatoes, sliced into wedges
  • 2 carrots, cut into large pieces
  • 1 head cabbage, stem removed and cut into wedges
  • 32 oz beef bone broth

How to Make Easy Corned Beef and Cabbage in the Crock Pot

This slow cooker corned beef and cabbage recipe is intentionally layered to ensure everything cooks evenly without getting mushy.

  1. Place the onion wedges in the bottom of the slow cooker and sprinkle with the seasoning packet.
  2. Set the corned beef on top of the onions and pour the beef bone broth over it.
  3. Cover and cook on low for 5 hours.
  4. Add the potatoes and carrots, making sure they are mostly submerged in the broth. Cover and cook for 2 more hours.
  5. Add the cabbage wedges on top and cook for 1 additional hour.
  6. Remove the corned beef, slice against the grain, and serve with the tender vegetables and broth.

Tips for the Best Slow Cooker Corned Beef

  • Always slice against the grain for the most tender bites.
  • Don’t add the cabbage too early — waiting prevents it from becoming overcooked.
  • Bone broth adds extra richness, but regular beef broth works if needed.

Make Ahead & Storage

This crock pot corned beef and cabbage reheats beautifully. Store leftovers in an airtight container in the refrigerator for up to 4 days. Reheat gently with a bit of broth to keep everything moist.

Why This Is the Perfect St. Patrick’s Day Dinner

This recipe keeps the tradition of corned beef and cabbage while making it realistic for busy families. It’s festive, comforting, and easy enough that you can enjoy the day instead of cooking all afternoon.

If you’re hosting or bringing food to share, this easy corned beef and cabbage in the crock pot is a dependable crowd-pleaser that won’t leave you stressed.

Final Thoughts

Whether you splurge on higher-quality corned beef or grab a budget-friendly option from Aldi, this slow cooker corned beef and cabbage recipe delivers consistent, delicious results every time.

It’s cozy, classic, and exactly the kind of hands-off meal we all need more of.ching the game at home, this easy football appetizer is always a win.
