Skillet Gnocchi with Sausage and Spinach

Description
This dish is super easy to prepare and a great way to use on-sale turkey sausage and fresh spinach. It’s a perfect weeknight meal that feels like a fancy restaurant dish!
Ingredients
• 1 pound store-bought gnocchi
• 2 tablespoons unsalted butter
• 1 sweet onion, sliced
• 2 garlic cloves, minced
• 1 pound uncooked turkey Italian sausage, casings removed and sliced
• 1 bunch spinach, chopped
• 1/2 cup chicken broth
• Salt and freshly ground black pepper, to taste
• 1/2 teaspoon red-pepper flakes (optional)
• 1/2 cup grated Parmesan cheese
• 1/4 cup chopped fresh parsley
Instructions
1. Bring a large pot of salted water to a boil. Add the gnocchi and cook until they float to the surface, about 4-5 minutes. Drain and set aside.
2. In a large skillet, melt the butter over medium heat. Add the sliced onion and cook until translucent, about 4-5 minutes. Add the minced garlic and cook until fragrant, about 1 minute.
3. Add the sliced turkey Italian sausage to the skillet with the onions and garlic. Cook, breaking up the sausage into smaller pieces with a wooden spoon, until it’s fully cooked through and browned, about 5-
7 minutes.
4. Add the chopped spinach and chicken broth to the skillet. Bring to a simmer, stirring occasionally, until the spinach is wilted and tender, about 3-4 minutes. Season with salt, black pepper, and red-pepper flakes (if using).
5. Add the cooked gnocchi to the skillet, along with the Parmesan and parsley. Toss everything together until well combined. Serve immediately, garnished with additional Parmesan and parsley if desired.
