If you’ve been searching for a hearty, budget-friendly dinner that’s also packed with protein, this High Protein Zucchini Ground Beef Casserole is going to be a new favorite. It’s creamy, cheesy, and comforting — but with simple ingredients you probably already have on hand.

I love this casserole because it’s sneaky healthy. The zucchini blends right in with the pasta and sauce, so even picky eaters don’t mind it. Plus, using cottage cheese instead of heavy cream or sour cream gives the dish an extra boost of protein without feeling heavy.

This recipe is perfect for busy weeknights, meal prep, or feeding a hungry family of five without breaking the bank.

Why You’ll Love This Casserole

  • High protein – cottage cheese + ground beef + mozzarella make this a muscle-fueling meal.
  • Kid-friendly – the veggies are baked into the sauce, and the cheesy topping wins everyone over.
  • Budget-friendly – pasta, zucchini, and beef are affordable staples.
  • Easy to make ahead – assemble the casserole earlier in the day and bake before dinner.

Ingredients You’ll Need

  • Ground beef – lean or regular both work.
  • Pasta – rotini, penne, or elbows hold the sauce well.
  • Cottage cheese – gives creaminess + protein. Swap with ricotta if you prefer.
  • Pasta sauce – choose your favorite jarred brand.
  • Zucchini – adds fiber and sneaks in veggies.
  • Mozzarella + Parmesan – for the gooey cheesy topping.

Step-by-Step Instructions

  1. Preheat oven to 350°F (175°C).
  2. Brown ground beef in a skillet with salt, pepper, and Italian seasoning.
  3. Cook pasta until just al dente (it will finish cooking in the oven). Drain.
  4. In the pasta pot, mix together pasta, ground beef, cottage cheese, pasta sauce, and chopped zucchini.
  5. Pour mixture into a greased 9×13 baking dish.
  6. Top with mozzarella, cover with foil, and bake 30 minutes.
  7. Remove foil and bake another 10 minutes until bubbly.
  8. Serve hot with fresh parmesan.

Storage & Meal Prep

  • Refrigerator: Store leftovers in an airtight container for up to 4 days.
  • Freezer: Assemble casserole (without baking), wrap tightly, and freeze up to 3 months. Thaw overnight before baking.
  • Meal prep tip: Divide into containers for high protein lunches.

FAQ: High Protein Zucchini Ground Beef Casserole

Can I use ground turkey instead of beef?
Yes! Ground turkey or chicken works just as well.

Is cottage cheese necessary?
No, but it adds creaminess and protein. Ricotta or Greek yogurt are good swaps.

Will kids eat this if they don’t like zucchini?
Most won’t notice! The zucchini softens into the sauce and blends with the pasta.

Final Thoughts

This High Protein Zucchini Ground Beef Casserole is everything I love in a family dinner — fast, filling, and made with real ingredients. Whether you’re feeding picky kids or meal prepping for the week, this recipe checks all the boxes.
