Ingredients

Scale
  • 1 large zucchini or 3 small, grated
  • 1 cup of oil (switch 1/2 a cup with apple sauce or all apple sauce, if you like)
  • 2 cups sugar
  • 3 eggs
  • 3 teaspoons vanilla
  • 3 teaspoons cinnamon
  • 1/4 teaspoon baking powder
  • 3 cups flour
  • 1 cup rasins or nuts (optional)
  • 1 teaspoon baking soda
  • 1 teaspoon salt

  • Preheat the oven to 325 degrees F.
  • Beat eggs until blended.
  • Add oil (or apple sauce), sugar, and grated zucchini.
  • Add vanilla, and dry ingredients. (add nuts and raisins- if adding)
  • Mix until moist.
  • Grease 2 loaf pans.
  • Pour the batter equally into each pan.
  • Bake for one hour until the center comes out clean.
  • Prep Time: 10
  • Cook Time: 60
