    Monday: Tacos – This is so basic, it doesn’t need a recipe! Cook up your taco flavored ground beef, warm your tortillas, and serve them with shredded cheese, sour cream, and salsa! If you need more filling, mix a can of refried beans into the ground beef.

      Curry Chicken in crock pot

      Tuesday: Michelle’s Slow Cooker Curry Chicken – This recipe was originally submitted by a Youtube subscriber and quickly became a family favorite. It’s the prefect meal for a tighter budget!

      Wednesday: Veggie Fried Rice is always a default budget meal for us. It’s simple and we all just love it so much. I was shocked that I was also able to afford these delicious dumplings to go along with it!

      Thursday: Refried Beans and Rice– This recipe is surprisingly hearty and flavorful!

      Friday: Slow Cooker Ritz Chicken With Green Beans – This is a classic that is such a treat on a menu like this!

      Saturday or Sunday (one night is leftovers): Baked Chicken and Rice With Roasted Broccoli – The original baked chicken and rice is here and I just adjusted it by using chicken breasts vs. chicken thighs.

      Roasted Broccoli:

      Ingredients:             

      1 large head of broccoli cut into florets             

      2 tablespoons olive oil             

      3 cloves garlic, minced          

      0.5 teaspoons salt       

      0.25 teaspoons black pepper

      Optional- Fresh lemon juice and parmesan cheese

      Instructions:

      1. Mix all of the ingredients together in a bowl. 

      2. Pour the broccoli on to a parchment lined backing sheet and distribute evenly.

      3. Bake at 350 degrees for 20 minutes, or until the broccoli is cooked according to your liking.

      4. Optional: Squeeze fresh lemon on the broccoli and sprinkle with parmesan cheese.

      For Breakfast:

      Make things easy on yourself this week with Peanut Banana Overnight Oats. I’ve even made them with defrosted frozen bananas and they are still delicious!

      It’s likely you already have what you need on hand to make these sheet pan pancakes so you might not even need to spend anything more! My kids can’t get enough of them, they freeze well, and they’re surprisingly fluffy!

      For a Sweet Treat: I admit, I owe you some new dessert recipes. And I have them coming soon! But until then, these Oatmeal Snickerdoodles absolutely NEVER disappoint!
