One such recipe, chicken leg quarters in the oven with sweet potatoes and carrots, captures the essence of fall. This delightful, savory meal combines budget-friendliness with incredible flavor, making it a perfect choice for your autumn dinner table

These oven baked chicken leg quarters are one of my favorite ways to make a really good dinner for very little money. Chicken leg quarters are usually one of the cheapest cuts of chicken at the grocery store, and when you roast them with sweet potatoes and carrots, you get an entire fall dinner on one pan.

This is exactly the kind of meal I start craving once the weather cools down. The chicken gets golden and juicy while the sweet potatoes and carrots roast underneath and soak up all of those savory chicken juices.

And depending on what chicken leg quarters cost that week, I can sometimes make this entire dinner for around $5.

It’s simple, inexpensive, and honestly way better than something this cheap has any right to be.
