- 1 large zucchini or 3 small, grated
- 1 cup of oil (switch 1/2 a cup with apple sauce or all apple sauce, if you like)
- 2 cups sugar
- 3 eggs
- 3 teaspoons vanilla
- 3 teaspoons cinnamon
- 1/4 teaspoon baking powder
- 3 cups flour
- 1 cup rasins or nuts (optional)
- 1 teaspoon baking soda
- 1 teaspoon salt
Instructions
- Preheat the oven to 325 degrees F.
- Beat eggs until blended.
- Add oil (or apple sauce), sugar, and grated zucchini.
- Add vanilla, and dry ingredients. (add nuts and raisins- if adding)
- Mix until moist.
- Grease 2 loaf pans.
- Pour the batter equally into each pan.
- Bake for one hour until the center comes out clean.
