Ingredients

For the Sauce:

  • 1/2 cup peanut butter
  • 1/2 cup soy sauce
  • 1 cup water
  • 2 tbsp rice vinegar
  • 4 tbsp honey
  • 2 tsp garlic powder

For the Bowls:

  • 2 tablespoons of olive oil
  • 3 large chicken breasts cut into cubes
  • Salt and pepper
  • 3 bell peppers sliced
  • 3 cups cooked rice

Instructions

  1. Slice peppers into thin strips.
  2. Cut chicken into bite sized cubes
  3. Heat 2 tablespoons of oil in a large pan over medium heat
  4. Add the chicken, salt and pepper, and peppers and cook for 7-10 minutes until cooked all the way through and the peppers are soft.
  5. Add the chicken, peppers, and cooked rice to 10 meal prep containers.
  6. Pour the sauce evenly over the chicken, peppers, and rice in the containers.

Notes

Store in the fridge up to 5 days or freeze up to 3 months. Remove from the freezer and place in the fridge to defrost overnight. Reheat in the microwave for 2 minutes..
