Thai Peanut Bowls With Chicken

Whip up these delicious Thai Peanut Chicken Bowls, perfect for meal prep! Packed with savory chicken, vibrant veggies, and creamy peanut sauce, it’s a flavorful dish to enjoy throughout the week. Need a quick dinner option? Simply scale down the recipe for a satisfying meal any night of the week!
Ingredients
For the Sauce:
- 1/2 cup peanut butter
- 1/2 cup soy sauce
- 1 cup water
- 2 tbsp rice vinegar
- 4 tbsp honey
- 2 tsp garlic powder
For the Bowls:
- 2 tablespoons of olive oil
- 3 large chicken breasts cut into cubes
- Salt and pepper
- 3 bell peppers sliced
- 3 cups cooked rice
Instructions
- Slice peppers into thin strips.
- Cut chicken into bite sized cubes
- Heat 2 tablespoons of oil in a large pan over medium heat
- Add the chicken, salt and pepper, and peppers and cook for 7-10 minutes until cooked all the way through and the peppers are soft.
- Add the chicken, peppers, and cooked rice to 10 meal prep containers.
- Pour the sauce evenly over the chicken, peppers, and rice in the containers.
Notes
Store in the fridge up to 5 days or freeze up to 3 months. Remove from the freezer and place in the fridge to defrost overnight. Reheat in the microwave for 2 minutes..
