This casserole definitely makes something out of nothing! You can serve a crowd using what you have in your pantry and a box of frozen taquitos!

Ingredients

Scale
  • 1 package frozen taquitos (16 in package)
  • 2 cups cooked white rice
  • 1 can black beans (drained)
  • 1 can corn (drained)
  • 1 can cheddar cheese soup
  • 2 tbsp salsa
  • 1 packet taco seasoning
  • 1 1/2 cups shredded cheddar (or your favorite cheese)
  • 1/4 cup diced tomato (for topping (optional))
  • 3 tbsp scallions (sliced for topping (optional))

Instructions

  1. Preheat oven to 375 degrees.
  2. Mix together rice, beans, corn, cheese soup, taco seasoning, and salsa.
  3. Pour mixture into a greased 9×13 pan.
  4. Top with the frozen taquitos and bake for 35 minutes.
  5. Remove the casserole and top with the cheese.
  6. Cook for an additional 5-10 minutes until the cheese is melted.
  7. Top with tomatoes and scallions if you'd like!

Notes

Alternatively, you can use enchilada sauce instead of the cheese soup and salsa, this is a different, yet delicious flavor.
