Description
This casserole definitely makes something out of nothing! You can serve a crowd using what you have in your pantry and a box of frozen taquitos!
Ingredients

- 1 package frozen taquitos (16 in package)
- 2 cups cooked white rice
- 1 can black beans (drained)
- 1 can corn (drained)
- 1 can cheddar cheese soup
- 2 tbsp salsa
- 1 packet taco seasoning
- 1 1/2 cups shredded cheddar (or your favorite cheese)
- 1/4 cup diced tomato (for topping (optional))
- 3 tbsp scallions (sliced for topping (optional))
Instructions
- Preheat oven to 375 degrees.
- Mix together rice, beans, corn, cheese soup, taco seasoning, and salsa.
- Pour mixture into a greased 9×13 pan.
- Top with the frozen taquitos and bake for 35 minutes.
- Remove the casserole and top with the cheese.
- Cook for an additional 5-10 minutes until the cheese is melted.
- Top with tomatoes and scallions if you'd like!
Notes
Alternatively, you can use enchilada sauce instead of the cheese soup and salsa, this is a different, yet delicious flavor.
