This Taquito Casserole recipe uses a combination of pantry friendly ingredients and cheap taquitos from Walmart. The Taquitos (under $5 for 16 from Walmart) are all dressed up and your family will love it!
This casserole is amazingly easy! It’s a great way to use pantry ingredients like rice and beans. Using these additions make a frozen taquito even better. And you can really stretch a buck buying a $5 pack of taquitos and turning it into a whole lot more. Simply add cooked rice, beans, corn, taco seasoning, corn, and cheese soup to the bottom of a 9×13 and top with the taquitos. These are items I usually have in my pantry to it’s an easy casserole to whip up any night of the week!
Taquito Casserole is Shockingly Good!
My 5 year old gives this on a 5 out of 5 every time! And my husband, who is a not a huge fan of frozen food, adores this dish and was extremely surprised by the ingredients. Serving the taquitos on top of the rice makes this a one dish favorite. We like to serve ours with sour cream and extra salsa. Guacamole, cilantro, fresh sliced avocado, or hot sauce would also be great toppings on this casserole.

Super Easy Taquito Casserole
Ingredients
- 1 package frozen taquitos 16 in package
- 2 cups cooked white rice
- 1 can black beans drained
- 1 can corn drained
- 1 can cheddar cheese soup
- 2 tbsp salsa
- 1 packet taco seasoning
- 1 1/2 cups shredded cheddar or your favorite cheese
- 1/4 cup diced tomato for topping (optional)
- 3 tbsp scallions sliced for topping (optional)
Instructions
- Preheat oven to 375 degrees.
- Mix together rice, beans, corn, cheese soup, taco seasoning, and salsa.
- Pour mixture into a greased 9×13 pan.
- Top with the frozen taquitos and bake for 35 minutes.
- Remove the casserole and top with the cheese.
- Cook for an additional 5-10 minutes until the cheese is melted.
- Top with tomatoes and scallions if you'd like!
