Ingredients
- Leftover chicken (about 2 cups)
- 1 sweet potato, chopped
- 1 onion, chopped
- 1 clove garlic, minced
- 2 cups of tomatoes, chopped
- 1 cup of salsa
- 1 can of black beans, drained
- 1 cup of chicken broth
- 1 cup of cooked rice (or rice packet)
- Cooking oil (1-2 tablespoons)
- Sour cream and cheddar cheese for serving (optional)

In a large skillet over medium-high heat, add 1-2 tablespoons of cooking oil.

Add chopped sweet potatoes and onions. Cook until lightly browned, about 5-8 minutes.

Stir in tomatoes, cooked chicken, salsa, black beans, and chicken broth. Mix everything together.
