  • Leftover chicken (about 2 cups)
  • 1 sweet potato, chopped
  • 1 onion, chopped
  • 1 clove garlic, minced
  • 2 cups of tomatoes, chopped
  • 1 cup of salsa
  • 1 can of black beans, drained
  • 1 cup of chicken broth
  • 1 cup of cooked rice (or rice packet)
  • Cooking oil (1-2 tablespoons)
  • Sour cream and cheddar cheese for serving (optional)

Instructions

Instructions:

  1. In a large skillet over medium-high heat, add 1-2 tablespoons of cooking oil.

  2. Add chopped sweet potatoes and onions. Cook until lightly browned, about 5-8 minutes.

  3. Add minced garlic and cook for an additional 1 minute until fragrant.

  4. Stir in tomatoes, cooked chicken, salsa, black beans, and chicken broth. Mix everything together.

  5. Bring the mixture to a boil, then reduce the heat, cover, and simmer for 10-12 minutes until the sweet potatoes are tender.

  6. Once the sweet potatoes are cooked, add the cooked rice (or rice packet) and mix well. Allow the liquid to be absorbed.

  7. Serve hot with optional toppings like sour cream and cheddar cheese.
