Ingredients

  • 1 Bunch Green grapes

  • 2 kiwis

  • 1 mandarin orange

  • 1 wheel of brie

  • 2 tbsp apricot jam (or pesto for a green alternative)

  • Your favorite bread (e.g., homemade sourdough)

  • Irish cheddar cheese

  • 1 green pepper

  • Hummus

  • Crackers (gluten-free recommended)

  • Orange cheese balls (e.g., Lesser Evil pizza-flavored puffs)


Instructions

  1. Prepare the kiwi: Take a small knife and cut a zig-zag pattern around the middle of the kiwi (think Charlie Brown’s iconic shirt). Pull the pieces apart to reveal a decorative cut.

  2. Prepare the brie: Slice the top 1/4 off the wheel of brie, leaving the bottom 3/4 intact. Spread apricot jam on the bottom 3/4. Using a small knife or a shamrock cookie cutter, carve a shamrock shape in the top 1/4. Place it back on top so the jam shows through.

  3. Prepare the green pepper: Cut the pepper 1/2 to 1/3 of the way down, depending on its shape, to create a shamrock-like bowl. Fill it with hummus. Slice the remaining pepper into strips for dipping.

  4. Assemble the board:

    • Place the shamrock brie wheel as a focal point.

    • Arrange the green grapes in a large bunch.

    • Position the kiwis on both sides of the board.

    • Slice and place the mandarin halves on opposite sides.

    • Arrange cheddar cheese next to the grapes and in another area for balance.

    • Position the hummus-filled green pepper next to the cheese.

    • Place the sliced pepper strips between the pepper and other elements.

    • Fill any gaps with crackers, bread slices, and cheese balls to complete the display.
