My mother in law has a few signature recipes that are requested over and over again. And luckily, she’s kind enough to share them with anyone who asks. This spinach rice recipe is requested at event after event and even the kids gobble it up.
The Basics
The spinach rice recipe is only 6 ingredients and cooks for 30 minutes. You just dump all 6 ingredients in the pan. It can’t get much easier than that can it? And I suppose that’s what you get from from a seasoned mom, grandmother, and home cook.
For ingredients you’ll need a box of frozen chopped spinach, 1 stick butter, 3 chicken bullion cubes, 1 onion finely chopped and 2 cups rice (uncooked and not instant) and one can of chicken broth. And I feel like there’s a good chance you might have these ingredients on hand. Even if you don’t, they are super inexpensive.
To make the rice, put all 6 ingredients in pot, cover and simmer for 30 mins. From time to time, you want to stir the rice. The 30 mins is after it starts to all cook some (maybe like a simmer). You want to make sure it doesn’t burn to the bottom of the pan.

Janet’s Spinach Rice
Ingredients
- 1 box frozen chopped spinach
- 1/2 cup butter
- 3 cubes chicken bouillon
- 1 onion chopped
- 2 cups long grain white rice uncooked, non instant
- 1 can chicken broth
Instructions
- Add all the ingredients to a pot.
- Cook over medium heat until simmering.
- Cover and simmer for 30 minutes stirring as you go.
- After 30 minutes the rice should be cooked. Fluff with a fork and enjoy!
