I crave these sourdough discard rolls time after time! They are so buttery and fluffy, I’ve had them with burgers and even tropical pulled pork. I usually just eat a roll when I make them before letting anyone else enjoy them!
I highly recommend a few items for baking such as a baking mat, food scale, parchment paper, and kitchen-aid mixer. These can all be found in the baking section of may amazon store here.

Description
These rolls are buttery and delicious! A foolproof use for your sourdough discard!
Ingredients
- 7 grams instant yeast
- 50 grams sugar
- 250 grams warm milk
- 2 egg yolks
- 100 grams unfed starter
- 10 grams salt
- 500 grams bread flour
- 100 grams softened butter
- 1 egg white
- 2 tablespoons sesame seeds
Instructions
- Add warm milk, yeast ,and sugar to the bottom of a mixer fitted with a dough hook. Mix util well incorporated.
- Add egg yolks, starter, salt, flour, and softened butter.
- Mix with the dough hook for 6-8 minutes. You’ll know it’s done when it’s not sticky anymore and comes aways from the side of the bowl.
- Top with plastic and set aside for about 1 hour (you want to make sure it doubles in size, I try to put it somewhere warm).
- Measure the dough and divide it up into 8 even balls.
- To shape the rolls, pull the edges of each to the center of the bun and move it around int a circular motion with your hands. I recommend you watch my youtube video to see this.
- Place the rounded buns on a baking sheet topped with parchment paper. Top the buns with plastic wrap and let rise for another 30 minutes.
- Paint the buns with the egg white and sprinkle with sesame seeds.
- Bake at 350 degrees for 22 minutes until golden brown.
