Ingredients

  • 3 large white onions, sliced

  • 3 tablespoons butter

  • 2 tablespoons coconut sugar (or brown sugar, optional)

  • 64 ounces beef broth (reduced sodium preferred)

  • 1 tablespoon Worcestershire sauce

  • 1 clove garlic, minced

  • 1/3 cup dry sherry

  • 1 teaspoon dried thyme

  • 1 bay leaf

  • 6 slices Sourdough bread (stale or dry is best)

  • 3/4 cup sliced Gruyere cheese

  • 6 tablespoons freshly grated Parmesan cheese

  • Optional: crushed red pepper for topping


Instructions

  1. In a large non-stick pan, cook the onions, butter, and coconut sugar over medium-low heat until golden and caramelized, about 20 minutes.

  2. Transfer the onions to the slow cooker. Add beef broth, Worcestershire sauce, garlic, dry sherry, dried thyme, and bay leaf.

  3. Cook on low for 6–8 hours.

  4. Remove the bay leaf, ladle soup into oven-safe bowls, and top each with a slice of stale bread.

  5. Layer on Gruyere and Parmesan cheeses. Broil for 2–3 minutes until the cheese is melted and browned.

  6. Sprinkle with crushed red pepper if desired and serve warm.
