  • 1 large egg white
  • 2 teaspoons vanilla extract
  • 4 cups pecan halves (or walnuts)
  • 1 cup sugar
  • 1/2 cup brown sugar
  • 5 teaspoons cinnamon
  • 1/4 cup water

Instructions

  1. In a medium-sized bowl, whisk together one large egg white and two teaspoons of vanilla extract until frothy (approximately 2 minutes).
  2. Add four cups of pecan halves (or walnuts) to the egg white mixture and stir well.
  3. Incorporate one cup of sugar, half a cup of brown sugar, and five teaspoons of cinnamon into the pecan mixture. Give it a thorough stir.
  4. Spray the slow cooker with cooking spray and pour in the pecan mixture.
  5. Cook on low for 3 hours, stirring every hour.
  6. When the pecans are about 30 minutes from completion, add 1/4 cup of water and stir.
  7. Once done, lay the candied pecans flat on a baking tray to dry.
