You have many options when it comes to serving this dish. Any main dish would be lucky to be served next to this asparagus but here are 3 dishes I recommend:
Make it Kid Friendly:
Vegetables can be tricky here are some ways I recommend getting your kids into them:
- I always require a “no thank you bite” this means they need to try one bite even if they don’t like the item. This takes the pressure off of eating the entire thing.
- Make up a story about it, broccoli are trees, asparagus are tall grass, carrots are what bunnies eat. I got my kids to eat steak by telling them it’s what dinosaurs eat and they are steak lovers to this day. Sometimes, a creative story can go a long way.
- Sauce is your friend. I’ve seen kids put ketchup on some weird things and that’s ok. When I was a kid I loved cooked broccoli and French dressing. Strange, but I really enjoyed broccoli, as long as I had my dressing on it. I’m not afraid to put out parmesan cheese, Ranch dressing, ketchup, or even peanut butter, if it means my kids are interested in a vegetable.
Swap Ideas:
- This recipe calls for olive oil but you can always swap this out for whatever oil you prefer or whatever you have on hand.
- If you don’t have or don’t like parmesan, nutritional yeast is a good option here. And if parm is just a no-go, the asparagus will still cook well and taste great without it.
- While this recipe calls for garlic powder, you can always opt for fresh!
- If frozen asparagus is all you can get your hands on, you can still season it the same way and follow roasting instructions on the back of the package.
- And if asparagus just isn’t your thint, this recipe also works well with fresh green beans!
Shopping Tips:
- Try your best to purchase vegetables when they are in season. Asparagus’s peak season is April-May, in North America, so it’s not a bad idea to put this on the menu then.
