Description
This is a pantry friendly, hearty, and flavorful meal! Utilizing canned refried beans, rice, and diced tomatoes, this dish comes together with minimal effort and lots of zaz!

- 2 tablespoons of high heat oil
- 1 cup uncooked white rice
- 1 teaspoon cumin
- 2 cloves garlic, minced
- 1 cup water
- 1 up drained corn
- 1 can diced tomatoes
- 1/2 cup salsa
- 1 can refried beans
- 1 1/2 cups shredded cheddar cheese
Instructions
- Add oil to a large frying pan over medium high heat.
- Add the uncooked rice to the pan and saute for 2 minutes to toast it up.
- Add 1 tablespoon of cumin and 2 cloves of minced garlic to the rice and saute for 30 seconds.
- Add 1 up water, 1 can drained corn, and 1 can of diced tomatoes.
- Bring the mixture to a boil, reduce the heat to medium low, cover and simmer for 15 minutes.
- Remove the cover and add salsa and 1 can of refried beans. Mix well.
- Top the rice with shredded cheese, cover, and let the cheese melt for a couple of minutes.
- Enjoy with salsa, sour cream, hot sauce, cilantro, or avocado (basically any of your favorite taco toppings will do!
