French Toast Casserole
- 12 large eggs, beaten
- 2 cups milk
- 1 tsp vanilla extract
- 1/3 cup maple syrup
- 12 slices day old bread, cut into 1-inch cubes
- 2 (8 ounces) packages of cream cheese, cut into 1-inch cubes
- 1 cup fresh blueberries
Blueberry Sauce
- 1 cup white sugar
- 1 cup water
- 2 tablespoons cornstarch
- 1 cup fresh blueberries
- 1 tablespoon butter
Instructions
- Lightly grease a 9×13-inch casserole dish. Set the side.
- In a large bowl, whisk eggs, milk, and maple syrup.
- Cube the bread into 1-inch pieces and half to the casserole dish. Cube the cream cheese into 1-inch pieces and add on top of the bread, followed by the remaining bread.
- Pour the egg mixture over top the bread and cream cheese. Cover the casserole dish with plastic wrap and refrigerate overnight.
- Remove the casserole from the refrigerator 30 minutes before cooking. Preheat the oven to 350 degrees.
- Bake the casserole in the oven covered for about 30 minutes. Uncover the casserole and continue baking until the center is firm, about 25-30 minutes.
- While the casserole is cooking, prepare the blueberry sauce. Mix sugar, water, and cornstarch together in a medium-sized saucepan. Bring the mixture to a boil, stirring constantly about 3-4 minutes. Stir in the blueberries, reduce to low heat and continue to cook until the blueberries burst, about 10 minutes. Stir in the butter and remove from heat.
