For these I bought store bought oatmeal cookies and vanilla ice cream, but you can easily buy your own favorite cookie. Imagine chocolate chip, snickerdoodle, double chocolate, or even make your own! Then, you have the same freedom with the ice cream, while I aired on the side of caution, you can mix it up with double fudge or caramel cookie! Go bananas! These are also great for any BBQ, Memorial Day, and even Labor Day!

Description
Enjoy a delightful treat with these Ice Cream Cookie Sandwiches! Choose your favorite store-bought cookies and pair them with creamy ice cream. Add a sprinkle of patriotic sprinkles for a fun and tasty finish. Perfect for a quick dessert or summer snack!
Ingredients
- 1 package of store-bought cookies (about 3 inches in diameter, your favorite kind)
- 1 pint of your favorite ice cream
- Patriotic sprinkles (or any sprinkles of your choice)
Instructions

Lay out the cookies on a work surface. Choose cookies that are about 3 inches in diameter to match the size of the ice cream pint.

Using a bread knife, slice the entire carton of ice cream into 4 rounds. Work quickly as ice cream melts fast.

Place a round of ice cream on top of a cookie.

Top with another cookie to create a sandwich. Repeat this process to make 4 sandwiches in total.

Sprinkle the sprinkles around the edge of each sandwich, pressing them gently into the ice cream.
