Hey there, budget cooking superstars! March is here, and I’m already feeling the spring vibes. Maybe I’m getting ahead of myself! This week, we’ve got a mix of fresh, spring-inspired meals and some hearty, warming dishes to combat the lingering cold – at least where I’m living. I hope you enjoy the lineup and have a wonderfully fulfilling week ahead!
Monday: These Buddha Bowls are the prefect healthy start to the week! You can make the entire 10 meal prep and have some leftover for lunch or cut the recipe in half. I promise you you’ll be shocked by how delicious these are!
Tuesday: This Quinoa Enchilada Casserole is very pantry friendly and easy to make. And it’ll be a surprise to your family how well you’re eating without meat for these first two days of the week! I promise you, you won’t miss it!
Wednesday: This wasn’t on purpose, so please feel free to add some ground beef to your sauce, but I really think this simple frozen ravioli with sauce, garlic bread, and a salad is perfect for Wednesday. Thursday: Ok, meat finally hits the menu, and it’s worth the wait!!! This Chicken Diane is a simple recipe that has all the flavors of a fancy restaurant! Dijon mustard makes the sauce extra special! So give it a try!
Friday: This Cheesy Tortellini with Chicken Recipe is ooey gooey and everything you’ll love about a baked pasta dish!
Saturday or Sunday (one night is leftovers): This Super Simple 7-Can Soup is amazingly easy to throw in the slow cooker this weekend!
