Hey there, my friends! This week, let’s tackle those winter blues with a burst of culinary excitement! I’ve got a lineup of soul-warming soups and cozy comfort foods that’ll keep those taste buds dancing through the chilly days! And hey, who’s with me in hoping that groundhog was onto something? Because I’m itching to fire up that grill and indulge in some seriously delicious BBQ delights! Let’s spice things up and make this week a flavor-packed adventure!
Monday: These Chicken Teriyaki Bowls are more than just a meal prep. These are great for a healthy weeknight dinner and will make the whole family ask for seconds. You can make the entire 10 meal prep and have some leftover for lunch or cut the recipe in half.
Tuesday: Firefighter Chicken Spaghetti is one of the best casserole’s I’ve ever had! And this recipe will make enough to feed a crowd, so maybe invite some friends over!
Wednesday: This Cheeseburger Tater Tot Casserole is a great way to use those tots and ground beef you have hanging around in the bottom of your freezer. It’s also totally delicious and worth heading out to go buy the ingredients too!
Thursday: This Mississippi Potato Skillet Meal is super fast for busy weeknights and full of flavor! It’s everything I love about the crock pot meal in a quick 30 minute dinner! Serve this with a garden salad and you’re golden!
Friday: Canned Chicken Tortilla Soup is super easy to throw together from what you already have in your pantry. If you don’t tell them, your family will never know it was made of canned chicken.
Saturday or Sunday (one night is leftovers): This Cornbread Chicken Enchilada Casserole is another budget friendly treat. You can use fresh chicken or go for another can of chicken from the pantry!
For Breakfast:
Huevos Rancheros is a really fun breakfast to try! This is also a great budget dinner, if you want to switch things up!
These high protein Cottage Cheese Eggs are a great start to the day! I always like to start my day with something low carb and high protein and these eggs are perfect for that!
For a Sweet Treat: This Oatmeal Cookie Bar Recipe is brand new to the blog and soo soo delicious! I find making bars is so much easier than individual cookies and I might never go back!
