Ingredients

  • 2 teaspoons panko breadcrumbs
  • 1 teaspoon cumin
  • ½ teaspoon ground coriander
  • ¼ cup fresh mint, minced
  • 2 teaspoons dried parsley (or ¼ cup fresh parsley, minced)
  • 1 tablespoon lemon zest
  • 1 pound ground lamb
  • Slider buns (makes about 10 sliders)
  • Red pepper jelly or mint jelly
  • Lettuce leaves
  • Feta cheese

Instructions

  1. Prepare the Mixture: In a medium bowl, beat the egg. Mix in the panko breadcrumbs, cumin, and ground coriander. Add the fresh mint, parsley, and lemon zest, stirring well.
  2. Combine with Lamb: Add the ground lamb to the mixture and gently combine until evenly mixed. Avoid overworking the meat.
  3. Shape Patties: Using a tablespoon or cookie scoop, form the mixture into small patties. Flatten slightly and place on a foil-lined baking sheet.
  4. Broil Patties: Broil the patties for 6–8 minutes, flipping halfway through, until cooked through and lightly browned.
  5. Prepare Slider Buns: Slice the slider buns in half. Spread red pepper jelly (or mint jelly) on the top bun.
  6. Assemble Sliders: Place a lettuce leaf on the bottom bun, top with a lamb patty, sprinkle with feta cheese, and finish with the top bun.
  7. Serve: Enjoy these festive lamb sliders warm.

Notes

  • If fresh herbs aren’t available, substitute with dried versions (half the amount).
  • These sliders double as a great meatball recipe. Simply roll into balls, bake, and serve with feta cheese.
  • Red pepper jelly adds a tangy-sweet flavor, but mint jelly works well for a more traditional lamb pairing.
