Hello my fantastic friends! This January is feeling like an entire year of it’s own. Time seems to be doing its own thing! But you know what always brings a ray of sunshine to my days? Planning the week’s meals! It’s like a delicious countdown to happiness. Here’s to a week filled with joy, inspiration, and of course, lots of tasty moments! Cheers to making every day a delightful adventure!
I will continue to provide free weekly meal plans through 2024! Each plan follows the design of my “Stick to Your Budget Checklist” and includes 3 pantry friendly meal options (at least one of which is vegetarian), 3 budget conscious recipes, and assumes 1 leftovers day. There are also 2 breakfast options and a sweet treat to try!
Monday: Let’s do meatless Monday this week! This Hearty Minestrone Soup is a great way to start the week off with veggies and hearty beans!
Tuesday: These Chicken Flautas are super fun to try. You can use canned chicken or shredded chicken. Both are delicious!
Wednesday: This fried rice is always the perfect way to use up anything you have in your fridge or freezer. Use chicken, shrimp, steak, pork, or just go vegetarian! Fried rice is a great way to sneak in veggies and my kids will eat anything swimming in soy sauce.
Thursday: I feel like raviolis are always on sale in one form or another, fresh or frozen, you can find something on special. This ravioli bake comes in less than $15 and in under 45 minutes. It’s a great weeknight meal.
Friday: We’re doing pizza night again this Friday! Sloppy Joe Garlic Bread Pizza is one of my most viral recipes on social media and I think it’s pretty clear why everyone loves it!
Saturday or Sunday (one night is leftovers): Chicken, bacon, ranch? Say no more. Even if you don’t have an air fryer, try these Chicken, Bacon, Ranch Quesadillas in the oven and you’ll still be pleased. I’m watching the NFL playoffs this weekend so these will be perfect for game time!
For Breakfast: Cottage cheese was on sale this week, so it’s time to get back to basics! This healthy cottage cheese bowl is a favorite around here!
I know it’s not exactly pumpkin spice season but I have 2 cans of pumpkin in my pantry that are eagerly waiting to be used. These 2-Ingredient pumpkin muffins are exactly what the pantry ordered!
For a Sweet Treat: These Oatmeal Snickerdoodle’s are a family favorite and will definitely warm us up these cold days!
