My go-to budget friendly recipe is always fried rice. I love to grab leftover meat and throw it in, if I have it. But, often times, veggies and eggs are what’s on hand and the rice is still very delicious! This recipe will show you how to make fried rice with vegetables that you and your family will love!

      Description

Fried rice is a budget friendly staple. Lean on eggs as a protein and this fried rice will knock your socks off without breaking the bank!

      Ingredients

      Scale
      • 3 cups cooked white rice
      • 2 tablespoons of high heat oil
      • 1/2 an onion, chopped
      • 3 cloves of garlic, minced
      • 1 package of frozen mixed vegetables
      • 3 eggs
      • 1/4 cup soy sauce
      • 1/2 teaspoon oyster sauce

      Instructions

      1. Add 1 tablespoon of oil to a wok or large frying pan over high heat.
      2. Scramble the eggs in a small bowl then add them to the hot frying pan. Stir constantly until the eggs are cooked.
      3. Remove the eggs from the pan and set aside.
      4. Add the remaining oil to the wok or pan. Add the onion and cook for 3-4 minutes stirring regularly to avoid burning, until the onion is softened.
      5. Add the garlic and cook for 30 seconds.
      6. Cook the vegetables in the microwave according to package instructions.
      7. Add the rice and vegetables to the hot pan and add back the egg. Mix well.
      8. Add the soy sauce and oyster sauce (if using) and mix well. Stir regularly until all of the ingredients are hot and a bit crispy, 3-4 minutes.
