Description
Fried rice is a budget friendly staple. Lean on eggs as a protein and this fried rice will knock your socks off without breaking the bank!
Ingredients
- 3 cups cooked white rice
- 2 tablespoons of high heat oil
- 1/2 an onion, chopped
- 3 cloves of garlic, minced
- 1 package of frozen mixed vegetables
- 3 eggs
- 1/4 cup soy sauce
- 1/2 teaspoon oyster sauce
Instructions
- Add 1 tablespoon of oil to a wok or large frying pan over high heat.
- Scramble the eggs in a small bowl then add them to the hot frying pan. Stir constantly until the eggs are cooked.
- Remove the eggs from the pan and set aside.
- Add the remaining oil to the wok or pan. Add the onion and cook for 3-4 minutes stirring regularly to avoid burning, until the onion is softened.
- Add the garlic and cook for 30 seconds.
- Cook the vegetables in the microwave according to package instructions.
- Add the rice and vegetables to the hot pan and add back the egg. Mix well.
- Add the soy sauce and oyster sauce (if using) and mix well. Stir regularly until all of the ingredients are hot and a bit crispy, 3-4 minutes.
