Better Than Starbucks – Homemade Bacon, Egg, and Cheese bites

Hey there, budget-conscious foodies! If you’ve ever found yourself swooning over Starbucks’ delectable homemade bacon, egg, and cheese bites but cringing at the price tag, I’ve got your back. Today, I’m spilling the beans on how to recreate these mouthwatering treats at home without breaking the bank. Yep, you heard it right – and for as low as $1.07 per serving!

How to Make Homemade Bacon, Egg, and Cheese Bites

You don’t need to be a culinary wizard to whip up these budget-friendly bites. With just 8 eggs, a cup of cottage cheese, and a dash of salt and pepper, you’ve got the base covered. Feel free to toss in your favorite veggies – bell peppers, spinach, you name it – and if you’re feeling fancy, add in some ham, sausage, or cheese.

The simple recipe is just adding cooked bacon and cheddar cheese. But feel free to customize them like I mention above. Grease a muffin tin, add the egg mixture, and any add ins. Then bake at 350 for 30 minutes. Cool, remove from the muffin tin and enjoy!

Pro tip: Blend the mixture for extra fluffiness. Trust us, it makes a world of difference!

Freeze, Reheat, Repeat:

Life gets busy, I get it. That’s why these bites are freezer-friendly and reheat like a dream. Freeze them and defrost them in the fridge. Pop them in the microwave for a mere 45 seconds, and voila – a warm, homemade breakfast or snack in no time. No more excuses for hitting the drive-thru when you’ve got a budget-friendly alternative that takes less than a minute.

What To Serve With Homemade Bacon, Egg, and, Cheese Bites

Homemade coffee or tea goes best with these egg bites! I personally love the Donut Shop Coffee they sell at Aldi! It’s only $4.99 a bag which comes out to about $.15 for 6 ounces! That’s quite a bit cheaper than Starbucks and just as delicious!

Make it Healthier:

I’m always looking for new ways to add veggies to my dishes. Here are some ideas to add more nutrients to this dish:

  • I love to puree, cooked drained, frozen spinach or fresh spinach right in the same blender with the eggs, this adds the spinach without adding a crunch.
  • Microwave some frozen broccoli and add that to your egg bites for some greens! I love broccoli and cheese!
  • Chopped onions and peppers, fresh or frozen, are a great addition to these egg bites!

Make it Kid Friendly:

I always recommend you adjust recipes based on what your family likes. If your kids or even other family members are weary of this dish here are some swap recommendations to get them trying new things without serving a completely different dish:

  • The more your puree the veggies in the eggs, the less the kids will know they are there! I do like to have my kids try vegetables in their natural state and not “hide them”, if I can, but you gotta do what you gotta do to get some vitamins in those kids sometimes!
  • My kids love ketchup with their eggs, so offering a little dipping ketchup never hurt anyone.

Swap Ideas:

  • I haven’t tried this myself but I do wonder if the vegan egg substitutes would work with this?
  • Use bacon, ham, or sausage as a meat. I’ll usually just add whatever I have on hand or whatever is on sale that week.

Shopping Tips:

  • If eggs are on sale, make up a few batches of these and place them in the freezer for future weeks. It’s a great way to get a good deal and prep yourself for success.
  • The real bacon bits from Walmart, or Costco, are a great alternative to fresh bacon and can be quite a bit less expensive.

Savor the simplicity of homemade bacon, egg, and cheese bites—crafted with 8 eggs, a cup of cottage cheese, and a blend of your favorite veggies, they’re a budget-friendly delight perfect for a quick breakfast or satisfying snack!


Ingredients

Scale
  • 8 eggs
  • 1 cup cottage cheese
  • Salt and pepper to taste
  • Your choice of veggies (e.g., bell peppers, spinach)
  • Crumbled cooked bacon
  • 3/4 cup shredded cheddar cheese

Instructions

  1. Preheat your oven to 350°F.
  2. In a blender or using a hand mixer, combine 8 eggs, 1 cup of cottage cheese, salt, and pepper until smooth and fluffy.
  3. Optional: Blend in spinach for a seamless mixture.
  4. Grease a muffin pan and pour in the egg mixture.
  5. Customize each bite with your preferred veggies, meat, or cheese.
