These fluffy high protein egg bites are made with real ingredients like pasture-raised eggs, full-fat cottage cheese, and spinach. Baked in a muffin pan with steam for extra fluffiness, they’re a better-than-Starbucks option the whole family will love.


Ingredients

 

  • 2 pasture-raised organic eggs

  • 9 tbsp pasture-raised organic egg whites

  • 1 cup full-fat cottage cheese (Good Culture, Nancy's, or Breakstone’s)

  • Salt and pepper, to taste

  • 1/2 package frozen spinach, thawed

  • 6 slices uncured bacon, cooked and crumbled

  • 3/4 cup shredded cheddar cheese

  • Olive oil spray (for greasing muffin pan)


Instructions

  1. Preheat your oven to 350°F. Place a sheet pan filled with water on the bottom rack—this steam helps make the egg bites fluffy.

  2. In a blender or with a hand mixer, blend eggs, egg whites, cottage cheese, salt, and pepper until smooth.

  3. Optional: Blend in thawed spinach for a smoother texture.

  4. Spray a muffin tray or silicone muffin cups with olive oil spray.

  5. Pour egg mixture evenly into 10–12 muffin cups.

  6. Top with crumbled bacon and shredded cheese, or your favorite mix-ins.

  7. Bake for 20–22 minutes, or until set and lightly golden.

  8. Let cool before storing. Keep in the fridge up to 5 days or freeze for up to 2 months.
