9 tbsp pasture-raised organic egg whites

1 cup full-fat cottage cheese (Good Culture, Nancy's, or Breakstone’s)

1/2 package frozen spinach, thawed

6 slices uncured bacon, cooked and crumbled

3/4 cup shredded cheddar cheese

Olive oil spray (for greasing muffin pan)
Instructions

Preheat your oven to 350°F. Place a sheet pan filled with water on the bottom rack—this steam helps make the egg bites fluffy.

In a blender or with a hand mixer, blend eggs, egg whites, cottage cheese, salt, and pepper until smooth.
