Save Big with In-Season Veggies: Healthy Cucumber Salad Recipe

One of the ways my family saves big on groceries is by focusing on fresh, in-season vegetables. Each spring and summer, cucumbers are always sold at a discount, and this is great because it’s when they are most delicious. I love just slicing them and serving them with salt. We also love a house salad, and my kids enjoy dipping them directly in ranch dressing. But none of those are as fresh and delicious as this Healthy Cucumber Salad Recipe.

Enjoying Cool and Healthy Cucumber Salad

Cool and tangy with fresh dill (also an herb of the season), it’s everything you’d want for a hot day—and it’s healthy too! I even use Greek yogurt instead of sour cream to add some protein.

Creamy Cucumber Salad Recipe

Ingredients:

  • 1 English cucumber (no peeling necessary) or greenhouse cucumber, peeled and sliced
  • 1/4 cup thinly sliced red onion
  • 1/3 cup Greek yogurt or sour cream
  • 3 tablespoons mayo
  • 3 tablespoons white vinegar
  • 1/4 cup chopped dill
  • 1/2 teaspoon sugar
  • 1/4 teaspoon salt

Instructions:

  1. In a large bowl, combine the cucumber slices and thinly sliced red onion.
  2. In a separate bowl, mix together the Greek yogurt (or sour cream), mayo, white vinegar, chopped dill, sugar, and salt until well combined.
  3. Pour the dressing over the cucumber and onion mixture, and toss to coat evenly.
  4. Cover and refrigerate until ready to eat.
