Cool and tangy with fresh dill (also an herb of the season), it’s everything you’d want for a hot day—and it’s healthy too! I even use Greek yogurt instead of sour cream to add some protein.
Creamy Cucumber Salad Recipe
Ingredients:
- 1 English cucumber (no peeling necessary) or greenhouse cucumber, peeled and sliced
- 1/4 cup thinly sliced red onion
- 1/3 cup Greek yogurt or sour cream
- 3 tablespoons mayo
- 3 tablespoons white vinegar
- 1/4 cup chopped dill
- 1/2 teaspoon sugar
- 1/4 teaspoon salt
Instructions:
- In a large bowl, combine the cucumber slices and thinly sliced red onion.
- In a separate bowl, mix together the Greek yogurt (or sour cream), mayo, white vinegar, chopped dill, sugar, and salt until well combined.
- Pour the dressing over the cucumber and onion mixture, and toss to coat evenly.
- Cover and refrigerate until ready to eat.
