Description

This healthy grilled chicken sandwich is a family favorite, made with juicy air-chilled organic chicken, fresh veggies, and a flavorful marinade. It’s perfect for a quick, healthy dinner and is sure to please even the pickiest eaters.

Chicken Marinade:

  • 1/2 cup organic extra virgin olive oil

  • 1/2 lemon, juiced

  • 1 garlic clove, zested (using a microplane)

  • 1/2 tablespoon smoked paprika

  • 1 teaspoon ground garlic powder

  • 1 teaspoon onion powder

  • 1/4 cup coconut sugar

  • 1/2 tablespoon salt

  • Freshly ground pepper, to taste

Grilled Chicken Burger & Toppings:

  • 5 hamburger buns (homemade sourdough or Dave’s Killer Rolls)

  • 5 organic 4-6 oz thin sliced chicken breasts (Bell & Evans or other air-chilled chicken preferred)

  • Avocado mayo mixed with Momofuku chili crunch

  • 5 slices raw organic cheddar cheese

  • 1 organic tomato, sliced

  • 1 bunch of fresh organic lettuce leaves

  • 1 small red onion, sliced (optional for added crunch)


Instructions

  • Prepare the Chicken Marinade:
    In a large metal bowl, mix all marinade ingredients. Season with salt and pepper to taste. Taste and adjust flavors if needed.

  • Marinate the Chicken:
    Add thin sliced chicken to marinade, ensuring it’s fully submerged. Marinate for at least 15 minutes.

  • Prepare Burger Toppings:
    Slice tomato, onion (optional), and cheese. Wash lettuce and prep buns.

  • Preheat the Grill:
    Preheat your BBQ or cast iron grill to high heat.

  • Grill the Chicken:
    Place marinated chicken on the grill. Cook for 6-8 minutes on each side, ensuring grill marks and an internal temperature of 165°F.

  • Assemble the Sandwich:
    Layer grilled chicken on buns, add cheese, tomato, onion (optional), and lettuce. Top with avocado mayo mixed with chili crunch.
