These taco bowls have become some of my favorite ground turkey meal preps. While I also really enjoy egg rolls in a bowl. This is a nice change of pace and I love how well it freezes and that I can top it with anything I have on hand.

Description
Enjoy the savory delight of our Ground Turkey Taco Bowls – a wholesome fusion of seasoned ground turkey, vibrant vegetables, and zesty toppings, perfect for a quick and satisfying meal any day of the week!
Ingredients
- 2 pounds ground turkey (or taco seasoned turkey)
- 2 packets taco seasoning
- 2 cans refried beans
- 2 1/2 cups cooked rice
- 1 1/4 cups shredded cheddar cheese
- Store bought queso.
For Serving:
- Top with shredded lettuce
- Fresh pico de gallo
- Diced avocado
Instructions
- Place turkey in a large hot pan over medium heat and cook through or follow instructions on the taco packet.
- To assemble the bowls, layer with equal amounts refried beans, rice, ground turkey, shredded cheese, and queso.
- When ready to serve top with fresh pico or salsa, shredded lettuce, and sliced avocado.
Notes
Store in the fridge up to 4 days or freeze up to 3 months. Re-heat in the microwave 3-4 minutes. Then add desired toppings.
