I’ve gotta be fully transparent here — this is my mom’s green bean casserole, and it’s been a holiday tradition for as long as I can remember. She’s made it every Thanksgiving and Christmas, up to four times a year, because it’s highly requested.

Even people who normally don’t like green bean casserole love this version. It’s creamy, cheesy, and perfectly topped with a crunchy cornflake topping — all without a single can of cream of mushroom soup. After years of keeping it a family secret, my mom finally agreed it was time to share it.

Ingredients

Casserole Base:

  • 3 tablespoons unsalted butter
  • 2 tablespoons all-purpose flour
  • 1 teaspoon salt
  • ¼ teaspoon black pepper
  • 1 teaspoon sugar
  • 1 cup sour cream
  • 12 oz cooked and drained French green beans (frozen works perfectly)

Topping:

  • 2 cups shredded cheddar cheese (we prefer orange cheddar for color)
  • 1 tablespoon melted butter
  • ½ cup cornflake crumbs (preferably the specific ones your mom used — crushed cornflakes work if needed)

Instructions

  1. Preheat the oven to 350°F (175°C).

3. Stir in 2 tablespoons of flour and cook for 3 minutes, until bubbly. Remove from heat.

5. Fold in cooked and drained French green beans. Mix well.

7. Sprinkle 2 cups shredded cheddar cheese evenly over the top.

8. Combine 1 tablespoon melted butter with ½ cup cornflake crumbs and sprinkle over the cheese.

9. Bake for 30 minutes, until bubbly and golden on top.

Make-Ahead Tip: Cover and refrigerate for up to 24 hours. Remove from fridge 30 minutes before baking. Perfect to pop in the oven while the turkey rests!

    If I double the recipe will it still fit in a 2 quart dish? Or should I use a 9×13 pan?
