Description

This no-cook feta checkerboard appetizer is a stunning addition to any holiday table. Made with cubes of feta, watermelon, and cucumber, then topped with fresh basil and balsamic glaze, it’s light, refreshing, and completely olive-free. The checkerboard pattern gives it a beautiful, high-end look with minimal effort — the perfect make-ahead, stress-free appetizer for parties or family gatherings.

Ingredients

  • 1 block feta cheese (cut into 1/2-inch cubes)

  • 1 small seedless watermelon, rind removed and cubed

  • 1 large cucumber (English or Persian), peeled if desired

  • Fresh basil leaves

  • 2-3 tablespoons balsamic glaze, for drizzling

  • Optional: freshly cracked black pepper or a few mint leaves for garnish

Instructions

  1. Prepare Ingredients: Peel cucumber if preferred and trim rind from watermelon.

  2. Cut Evenly: Slice feta, watermelon, and cucumber into uniform cubes, roughly 1 to 1½ inches each.

  3. Assemble Checkerboard:
On a flat serving platter, arrange cubes in a 6×6 grid, alternating colors and textures so no two of the same ingredient touch.

  4. Add Fresh Basil: Scatter or tuck basil leaves across the top for color and freshness.

  5. Drizzle & Serve: Lightly drizzle balsamic glaze over the platter just before serving. Add optional black pepper or mint if desired.

Notes

Cut consistency matters: Uniform cubes create the clean, geometric look that makes this dish stand out.

Keep it chilled: Refrigerate cubes before assembly so the feta and watermelon hold their shape.

Make ahead: You can cube everything several hours in advance and assemble just before serving.

Presentation tip: Use a large, flat white platter so the colors pop beautifully.

Variation: Swap basil for mint or add a sprinkle of pomegranate seeds for a festive twist.
